Chicken Broccoli Slaw Avocado Toast

In true millennial fashion I am a sucker for avocado toast. This version is a little lighter due to the use of the Greek yogurt to help make the chicken salad creamy. The everything bagel seasoning also adds awesome onion flavor without being overpowering.



Ingredients

For the Chicken Salad

2 Chicken Breasts

1 bag broccoli slaw

(you can make your own by grating 2 large crowns of broccoli, 2 large carrots and 1 cup shaved red cabbage)

1/2 cup Greek yogurt

1/4 cup ranch dressing

1/2 cup cider vineger

1/2 cup olive oil

1 tsp Dijon Mustard

1 Tbsp everything bagel seasoning

Salt & Pepper to taste


For the Avocado toast

1 Avocado

10 Cherry tomatoes

1.5 cups Chicken Salad Broccoli slaw

2 slices of your favorite bread

Salt & Pepper to taste

Everything bagel seasoning as needed


Directions

Preheat your oven to 400 degrees. Combine the cider vinegar, oil, Dijon mustard, and a pinch each of salt and pepper to make the vinaigrette. Use half the vinaigrette to marinate the chicken and back for 20 minutes or until cooked through and the juices run clear. once chicken is cooked and cooled dice and shred it and mix it with your broccoli slaw. Combine the reserved vinaigrette with the yogurt, ranch, and everything bagel seasoning. Then mix dressing with the chicken and broccoli slaw and let marinate in the fridge a couple hours before eating.


To assemble your toast toast off your favorite bread and thinly slice your avocado. Each slice should get half an avocado but you can do more based ion preference. Then dice the cherry tomatoes and add them. Season with salt and pepper to taste and then add your chicken and broccoli slaw and finish with a few more shakes of everything bagel seasoning and enjoy!
